Dr. Mercedes Careche is the coordinator of ITD horizontal activity Intellectual Property Protection. She works at the Department of Fish and Meat Science of Instituto del Frio, Spain, where she is also Associate Professor in Food Science and Technology. She has been a project leader for several research projects, including projects supported by the EU. She has served as an evaluator for research boards, nationally and internationally, and has served as a member of several academic examination boards. Her work has concentrated mainly on the quality of fish and fish products ranging from quality improvement and assurance to its evaluation. She is currently working on the structural and functional changes of muscle proteins and their interactions with other food components. She is author of more than 40 refereed publications in journals and books.
