Professor Jörg Oehlenschläger, PhD, is the coordinator of ITD Pillar 5, Dissemination. He holds the position of scientific director at the Federal Research Centre for Fisheries in Germany. He is an internationally renowned expert in fish quality, fish composition and fish technology. He has undertaken research in the field of functional components in seafood, such as selenium, iodine, and zinc. He has published more than 200 papers on seafood quality and is co-editor of two books in this area.
