Major achievements in 2004

Reports on the methodologies available to authenticate species and to assess quality have been elaborated in order to discuss their adequacy for each link through the different fish chains in Europe. A database of DNA fish sequences has been built up with the purpose to be used as validation tool to authenticate the origin of seafood products by direct sequencing.

Further reports include microbiological and sensory parameters and the verification of the production method, state of preservation, presence of additives and nutritional composition. In the absence of reference methods, recommendations are being made about the best possible method for each purpose, circumstance and environment.
